The ketogenic diet, a.k.a. “cutting carbs,” is all the rage in the fitness world. But is it better for you than any other kind of diet? And does it actually make athletes stronger or faster? These questions have been debated for hundreds of years, and every few decades the idea that cutting carbs can unlock your true athletic potential comes back into fashion. Canadian race walker Evan Dunfee was part of the most recent and most rigorous testing of the low-carb high-fat diet, which took him straight to the top of his sport.
